  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 3 large garlic cloves, minced
  • 3 ½ cups low sodium chicken broth
  • 1 (13 oz) package chicken sausage, sliced
  • 1 (12 oz) package frozen cooked shrimp, peeled and deveined
  • 12 cups sliced mushrooms
  • 1 pound uncooked cavatappi pasta
  • 1 Tbsp Cajun seasoning
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1 bell pepper, sliced
  • 1 (8 oz) package cream cheese, softened
  • 1 cup shredded parmesan cheese

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil and once hot, sauté onion for about 3 minutes until translucent. Stir in minced garlic for an additional 20 seconds until fragrant.
  2. Pour in chicken broth, scraping the bottom of the pot. Layer in chicken sausage slices, mushrooms, cavatappi pasta, Cajun seasoning, and fire-roasted tomatoes without stirring.
  3. Secure the lid and set to manual/pressure cook for 4 minutes. Perform a quick release once done.
  4. Stir in cream cheese until melted, then add bell pepper and shrimp; cover on warm for about 5 minutes.
  5. Mix in parmesan cheese before serving hot.
