- 1 Tbsp olive oil
- 1 cup diced onion
- 3 large garlic cloves, minced
- 3 ½ cups low sodium chicken broth
- 1 (13 oz) package chicken sausage, sliced
- 1 (12 oz) package frozen cooked shrimp, peeled and deveined
- 1–2 cups sliced mushrooms
- 1 pound uncooked cavatappi pasta
- 1 Tbsp Cajun seasoning
- 1 (14.5 oz) can fire roasted tomatoes
- 1 bell pepper, sliced
- 1 (8 oz) package cream cheese, softened
- 1 cup shredded parmesan cheese
Instructions
- Set your Instant Pot to sauté mode. Add olive oil and once hot, sauté onion for about 3 minutes until translucent. Stir in minced garlic for an additional 20 seconds until fragrant.
- Pour in chicken broth, scraping the bottom of the pot. Layer in chicken sausage slices, mushrooms, cavatappi pasta, Cajun seasoning, and fire-roasted tomatoes without stirring.
- Secure the lid and set to manual/pressure cook for 4 minutes. Perform a quick release once done.
- Stir in cream cheese until melted, then add bell pepper and shrimp; cover on warm for about 5 minutes.
- Mix in parmesan cheese before serving hot.
