  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons cold unsalted butter (cut into cubes)
  • ¾ cup milk
  • 1 tablespoon olive oil
  • 2 pounds bone-in chicken thighs
  • 1 small yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 medium carrots (chopped)
  • 2 cloves garlic (minced)
  • 3 ½ cups low sodium chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup frozen peas
  • 1 tablespoon cornstarch mixed with water

Instructions

  1. Chop the onions, celery, carrots, and mince the garlic; set aside.
  2. In the Instant Pot, select 'Sauté' and heat olive oil with butter. Add chopped vegetables and sauté for about 5 minutes until softened.
  3. Add chicken thighs and broth along with thyme, bay leaves, salt, and pepper.
  4. Secure the lid and set to 'Manual' for high pressure cooking for 8 minutes. Allow natural release for about 10 minutes.
  5. Meanwhile, prepare dumpling dough by mixing flour, baking powder, salt, cold butter until crumbly; stir in milk just until combined.
  6. Remove chicken to shred it into bite-sized pieces. Stir peas into the pot; mix cornstarch with water and add to thicken.
  7. Drop spoonfuls of dumpling dough atop the mixture. Close lid and pressure cook on high for another 5 minutes.
  8. Release pressure once done and gently stir before serving.
