  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 3 cloves garlic, minced
  • 4 medium carrots, chopped
  • 1 ½ cups long grain brown rice, uncooked and rinsed
  • 1 tablespoon Dijon mustard
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound boneless skinless chicken breasts
  • 1 ¾ cups low sodium chicken broth (14.5 oz can)
  • 1 cup frozen peas

Instructions

  1. Heat olive oil in the Instant Pot on the sauté setting. Add onion and sauté until softened, about 3 minutes. Stir in garlic for another 30 seconds.
  2. Add carrots, brown rice, Dijon mustard, garlic powder, Italian seasoning, salt, pepper, and chicken broth. Stir well.
  3. Place chicken breasts on top of the rice mixture.
  4. Seal the lid and pressure cook on high for 20 minutes.
  5. Allow a natural release for 10 minutes before quick-releasing any remaining pressure.
  6. Remove chicken and shred it after resting a few minutes; mix back into the rice along with cooked peas.
  7. Serve hot!
