- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 cup chopped carrot
- 1 green bell pepper, chopped

- 1 ½ cups dry green lentils
- 15-ounce can tomato sauce
- ¼ cup ketchup
- 2 tablespoons pure maple syrup
- 1 tablespoon apple cider vinegar
- 2 teaspoons yellow mustard
- 2 teaspoons chili powder
- Salt and black pepper to taste
- 2 ½ cups vegetable broth
Instructions
- Sauté vegetables: In the Instant Pot, heat olive oil using the sauté function. Add onion, carrot, and bell pepper; cook for about 4 minutes until softened. Stir in garlic and cook for an additional 30 seconds. Cancel sauté mode.
- Combine ingredients: Add lentils, tomato sauce, ketchup, maple syrup, apple cider vinegar, mustard, chili powder, salt, pepper, and broth. Stir well to combine.
- Pressure cook: Secure lid and set steam release valve to sealing. Cook on high pressure for 5 minutes; it will take about 15 minutes to reach pressure.
- Release pressure: Let the pressure release naturally for 10 minutes before carefully venting any remaining steam.
- Serve: Stir the mixture well and serve on toasted buns with desired toppings.
