  • 1/2 cup orange juice (freshly squeezed)
  • 1/4 cup brown sugar
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 cup long grain white rice (rinsed)
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, whisk together the orange zest, orange juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, and red pepper flakes if using.
  2. Cut the chicken into 1-inch pieces and sauté in olive oil in the Instant Pot until browned.
  3. Pour the prepared sauce over the chicken and stir to combine.
  4. For pot-in-pot cooking, place a trivet above the chicken and set an oven-safe bowl with rinsed rice and water on top.
  5. Close the Instant Pot lid and cook on high pressure for 4 minutes.
  6. Allow natural pressure release for about 10 minutes before carefully venting.
  7. To thicken the sauce, mix cornstarch with water and add it to the pot while using sauté mode until thickened.
  8. Serve hot over fluffy rice, garnished with green onions and sesame seeds.
