  • 1/2 cup diced onions
  • 3 garlic cloves, minced
  • 1 tablespoon unsalted butter
  • 1 1/2 cups arborio rice
  • 1/2 cup white grape juice
  • 3 1/2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 pound diced chicken breast
  • Old Bay seasoning (to taste)
  • Salt and pepper (to taste)
  • 1 cup fresh spinach
  • 7 oz asparagus, chopped
  • Juice from 23 lemons (optional)

Instructions

  1. Set your Instant Pot to sauté mode and heat olive oil. Add diced onions and minced garlic; sauté for about 3-4 minutes until soft.
  2. Stir in unsalted butter until melted, then add arborio rice. Toast for 1–2 minutes until well-coated.
  3. Pour in white grape juice and chicken broth, stirring to coat the rice evenly.
  4. Seal the lid and set to Manual high pressure for 8 minutes.
  5. While cooking, season diced chicken with Old Bay seasoning, salt, and pepper.
  6. Once cooking is complete, perform a quick release of steam.
  7. Switch back to sauté mode and add seasoned chicken, Parmesan cheese, spinach, and chopped asparagus. Stir gently until chicken is cooked through and cheese melts.
  8. Drizzle with fresh lemon juice before serving warm.
