  • 1 medium onion, diced
  • 1 (12 oz) package beef smoked sausage, halved and sliced
  • 1 Tbsp minced garlic
  • 4 cups chicken broth
  • 1 pound Russet potatoes, peeled and cut into cubes
  • Fresh cracked pepper
  • 1 tsp smoked paprika
  • 1 (8 oz) can tomato sauce
  • 2 large kale leaves, stem removed and chopped
  • ¼ cup heavy cream

Instructions

  1. Set your Instant Pot to sauté mode and heat olive oil. Add diced onion and cook until translucent.
  2. Stir in sliced chicken sausage and minced garlic; sauté for 2 minutes until fragrant.
  3. Pour in chicken broth and add cubed potatoes. Season with smoked paprika and fresh cracked pepper.
  4. Secure the lid, set to pressure cook on high for 4 minutes, then allow a natural release for 5 minutes before quick releasing any remaining pressure.
  5. Open the lid, stir in chopped kale and tomato sauce, then drizzle in heavy cream. Mix gently.
