Ingredients
- 4 or 5 medium-large bell peppers
- ½ pound lean ground beef (or ground turkey)
- 1 cup cooked brown rice
- ½ cup finely chopped yellow onion
- 15-ounce can diced tomatoes
- 8-ounce can tomato sauce
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Prepare the bell peppers by slicing off the tops and removing seeds.
- Brown the ground beef in the Instant Pot using the sauté function; add onions if desired.
- In a bowl, mix browned beef (or uncooked), rice, onion, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt, pepper, and half of the cheese.
- Add water to the Instant Pot and place a metal trivet inside.
- Stuff each pepper with the filling and place them on the trivet; top with remaining tomato sauce.
- Close the lid and pressure cook for 8 minutes (if beef is pre-cooked) or 16 minutes (if uncooked).
- Quick release pressure and check that peppers reach at least 165°F.
- Add remaining cheese on top and let it melt before serving.
