  • 4 or 5 medium-large bell peppers
  • ½ pound lean ground beef (or ground turkey)
  • 1 cup cooked brown rice
  • ½ cup finely chopped yellow onion
  • 15-ounce can diced tomatoes
  • 8-ounce can tomato sauce
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Prepare the bell peppers by slicing off the tops and removing seeds.
  2. Brown the ground beef in the Instant Pot using the sauté function; add onions if desired.
  3. In a bowl, mix browned beef (or uncooked), rice, onion, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt, pepper, and half of the cheese.
  4. Add water to the Instant Pot and place a metal trivet inside.
  5. Stuff each pepper with the filling and place them on the trivet; top with remaining tomato sauce.
  6. Close the lid and pressure cook for 8 minutes (if beef is pre-cooked) or 16 minutes (if uncooked).
  7. Quick release pressure and check that peppers reach at least 165°F.
  8. Add remaining cheese on top and let it melt before serving.
