Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 2 tablespoons canola oil
  • 1 tablespoon minced ginger
  • 6 minced garlic cloves
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 4 teaspoons reduced sodium soy sauce
  • 1/3 cup white granulated sugar
  • 1/2 cup pineapple juice
  • 10 ounces canned pineapple chunks
  • 1 red bell pepper, cut into chunks

Instructions

  1. Cut the chicken into 2–3 inch chunks.
  2. Set your Instant Pot to Sauté mode and add canola oil. Once hot, add chicken and sauté for 2–3 minutes until golden brown.
  3. Stir in ginger, garlic, ketchup, vinegar, soy sauce, sugar, and pineapple juice until well combined.
  4. Add pineapple chunks and red bell pepper; stir gently.
  5. Close the lid securely and set to Poultry function on High Pressure for 5 minutes.
  6. Allow a natural pressure release for about 10 minutes before carefully releasing any remaining pressure.
  7. Serve hot with garnishes like sesame seeds and chopped green onions.
