- 1 1/2 pounds boneless, skinless chicken thighs
- 2 tablespoons canola oil
- 1 tablespoon minced ginger
- 6 minced garlic cloves
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 4 teaspoons reduced sodium soy sauce
- 1/3 cup white granulated sugar
- 1/2 cup pineapple juice
- 10 ounces canned pineapple chunks
- 1 red bell pepper, cut into chunks
Instructions
- Cut the chicken into 2–3 inch chunks.
- Set your Instant Pot to Sauté mode and add canola oil. Once hot, add chicken and sauté for 2–3 minutes until golden brown.
- Stir in ginger, garlic, ketchup, vinegar, soy sauce, sugar, and pineapple juice until well combined.
- Add pineapple chunks and red bell pepper; stir gently.
- Close the lid securely and set to Poultry function on High Pressure for 5 minutes.
- Allow a natural pressure release for about 10 minutes before carefully releasing any remaining pressure.
- Serve hot with garnishes like sesame seeds and chopped green onions.
