For the Muffins:

  • 1 lb ground chicken or beef

  • 2 large eggs

  • 1½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ¼ cup sugar-free marinara or tomato paste

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp salt

  • ¼ tsp black pepper

For the Topping:

  • ¼ cup mini beef pepperoni or cooked sausage crumbles

  • ¼ cup shredded mozzarella (for topping)

  • 1 tsp dried basil or Italian seasoning

Optional Add-Ins (for extra flavor):

  • 2 tbsp chopped cooked bacon

  • 2 tbsp finely diced cooked mushrooms

  • 1 tbsp nutritional yeast (for a cheesy kick)


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a muffin tin with silicone liners or spray with nonstick spray.

Step 2: Mix the Base
In a large mixing bowl, combine ground meat, eggs, mozzarella, Parmesan, tomato paste, garlic powder, onion powder, oregano, salt, and pepper. Mix until fully combined and slightly sticky.

Step 3: Fill the Muffin Tin
Scoop the mixture into each muffin cup, filling them nearly to the top. Press gently to compact the mixture.

Step 4: Add Toppings
Top each muffin with a small sprinkle of mozzarella cheese and a few mini beef pepperoni slices or sausage crumbles. Sprinkle a little basil or Italian seasoning on top for extra flavor.

Step 5: Bake
Bake for 20–25 minutes, or until the tops are golden and the muffins are firm to the touch. If needed, broil for 1–2 minutes at the end for extra crispiness.

 

Step 6: Cool and Serve
Let the muffins cool in the pan for 5 minutes before transferring to a cooling rack. Serve warm or store for later.

Notes

Drain Excess Moisture – If using high-fat meat, drain the mixture slightly before baking.
Compact the Mix – Press the meat firmly into the muffin tin so they hold together well.
Customize Toppings – Add any low-carb, carnivore-friendly toppings you love.
