Ingredients
For the Filling:
1 tbsp olive oil
1 lb thinly sliced beef steak (ribeye or sirloin)
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 small yellow onion, thinly sliced
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
4 slices provolone cheese (or mozzarella, if preferred)
For the Keto Rolls (Cheese Wraps):
1½ cups shredded mozzarella cheese
2 large eggs
¼ tsp baking powder
1 tbsp almond flour
1 tbsp cream cheese, softened
Optional Toppings:
Chopped fresh parsley
Dollop of sour cream or keto-friendly sauce
Instructions
Step 1: Prepare the Cheesesteak Filling
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add the thinly sliced onions and bell peppers. Sauté for 5-7 minutes until soft and lightly caramelized.
Push the vegetables to the side of the skillet and add the thinly sliced steak.
Sprinkle with garlic powder, salt, and black pepper. Cook for 3-4 minutes, stirring until browned.
Mix steak and veggies together in the skillet and set aside.
Step 2: Make the Keto Cheese Wraps
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a microwave-safe bowl, melt the mozzarella cheese for about 1 minute until soft and stretchy.
Stir in cream cheese, eggs, almond flour, and baking powder until smooth and well combined.
Spoon the mixture into 4 even rounds on the baking sheet. Flatten each into a thin circle, about 6 inches wide.
Bake for 8-10 minutes until golden and set. Remove and let cool slightly.
Step 3: Assemble the Rolls
Place a slice of provolone cheese on each cooled cheese wrap.
Spoon the steak and veggie mixture evenly over the cheese.
Carefully roll each wrap tightly to enclose the filling.
Return to oven for 3-5 minutes until the cheese inside is melted.
Step 4: Serve & Enjoy
Garnish with chopped parsley or a dollop of sour cream if desired.
Serve warm with a side of keto-friendly dipping sauce or a green salad.
