Ingredients
For the Panna Cotta:

1 can (13.5 oz) full-fat coconut milk

½ cup unsweetened almond milk (or any preferred milk)

¼ cup fresh key lime juice (about 6–8 key limes)

2 tsp key lime zest

¼ cup granulated sugar

2 tsp unflavored powdered gelatin

2 tbsp water (for blooming gelatin)

½ tsp vanilla extract

Pinch of salt
For the Topping (Optional):

Whipped cream or coconut whip

Lime zest curls

Instructions
Step 1: Bloom the Gelatin
In a small bowl, sprinkle the powdered gelatin over 2 tablespoons of water.
Let it sit for 5–10 minutes to bloom and soften.
Step 2: Warm the Coconut Mixture
In a saucepan over medium heat, combine the coconut milk, almond milk, sugar, vanilla extract, lime zest, and a pinch of salt.
Whisk and heat until the mixture is warm and the sugar has fully dissolved—do not let it boil.
Step 3: Add the Gelatin
Once the mixture is warm, remove from heat.
Stir in the bloomed gelatin and whisk until fully dissolved.
Let the mixture cool slightly for 5 minutes, then stir in the key lime juice.
Step 4: Strain and Pour
(Optional but recommended for smooth texture) Strain the mixture through a fine mesh sieve into a measuring cup or bowl with a spout.
Divide the mixture evenly into 4 serving glasses, ramekins, or silicone molds.
Step 5: Chill Until Set
Cover and refrigerate for at least 4 hours or overnight until set.
The panna cotta should be firm but still have a slight jiggle when ready.
Step 6: Garnish and Serve
If using molds, gently unmold onto a serving plate by running a knife around the edge and dipping the mold briefly in warm water.
Top with toasted coconut, a dollop of whipped cream or coconut whip, lime zest curls, and mint leaves.
Notes
- Don’t Boil the Coconut Mixture – Just warm it enough to dissolve sugar and gelatin.
- Strain for Extra Smoothness – Especially helpful if zest or curdling occurs.
