For the Soup:

  • 1 tbsp olive oil

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp crushed red pepper flakes (optional)

  • 2 tbsp tomato paste

  • 1 can (28 oz) crushed tomatoes

  • 4 cups low-sodium beef or chicken broth

  • 8 oz lasagna noodles, broken into pieces

For the Cheese Topping:

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated parmesan cheese

  • 2 tbsp chopped fresh parsley or basil (optional)


Instructions

Step 1: Brown the Meat
Heat olive oil in a large pot over medium heat.
Add ground beef and cook until browned, about 5–7 minutes.
Drain excess fat if needed.

Step 2: Sauté the Aromatics
Add diced onion and sauté until translucent, about 3 minutes.
Stir in garlic and cook for 1 more minute until fragrant.

Step 3: Season & Simmer
Add salt, pepper, oregano, basil, red pepper flakes, and tomato paste.
Stir to coat the meat and cook for 1–2 minutes to deepen flavor.
Pour in crushed tomatoes and broth. Stir well.

Step 4: Cook the Pasta
Bring soup to a boil, then reduce to a simmer.
Add broken lasagna noodles and cook uncovered for 10–12 minutes, stirring occasionally, until noodles are tender.

Step 5: Prepare the Cheese Topping
While the soup simmers, mix ricotta, mozzarella, parmesan, and chopped herbs in a small bowl.
Set aside for topping.

Step 6: Serve & Garnish
Once pasta is cooked, taste soup and adjust seasoning as needed.
Ladle soup into bowls and top each serving with a generous spoonful of the cheese mixture.
