Ingredients
For the Toast:
4 slices of thick-cut bread (sourdough, brioche, or multigrain)
1 cup whole-milk ricotta cheese
1 tbsp honey (plus more for drizzling)
1 tsp lemon zest
½ tsp vanilla extract (optional)
Pinch of salt
Butter or olive oil (for toasting)
For the Toppings:
1 cup fresh blueberries (or thawed frozen blueberries)
Extra lemon zest (for garnish)
Fresh mint leaves (optional)
Chopped pistachios or almonds (optional, for crunch)
Instructions
Step 1: Toast the Bread
-
Toast the bread slices until golden and crispy.
– You can use a toaster, or for extra richness, lightly butter or oil the slices and toast them in a skillet over medium heat until golden on both sides.
Step 2: Prepare the Ricotta Mixture
-
In a small bowl, mix ricotta cheese with 1 tbsp honey, 1 tsp lemon zest, vanilla extract (if using), and a pinch of salt.
-
Stir until smooth and creamy. You can also whip it in a food processor for an extra fluffy texture.
Step 3: Assemble the Toast
-
Spread a generous layer of the whipped lemon-honey ricotta over each toasted slice of bread.
-
Top with fresh blueberries, either scattered loosely or pressed slightly into the ricotta.
-
Drizzle with a little extra honey, and garnish with more lemon zest, fresh mint, or chopped nuts if desired.
Step 4: Serve and Enjoy
-
Serve immediately while the toast is still slightly warm.
-
Enjoy with a side of fruit, a cup of coffee, or your favorite smoothie.
Notes
Use Whole-Milk Ricotta – It’s richer, creamier, and more flavorful than part-skim.
Toast the Bread Well – A crisp base holds up better to creamy toppings.
Make It Sweet or Savory – Add more honey for sweetness or try black pepper for a savory kick.
Zest First – Zest your lemon before cutting it for juice to avoid a struggle.
Use Seasonal Berries – Blueberries are great, but strawberries, raspberries, or blackberries work too.
