Wet Ingredients:

½ cup honey or maple syrup

½ cup unsweetened applesauce

⅓ cup coconut oil or vegetable oil

¼ cup fresh lemon juice (about 2 lemons)

Instructions
Step 1: Prep the Oven & Muffin Tin
Preheat oven to 350°F (175°C).
Line a muffin tin with paper liners or lightly grease each cup.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together oats, flour, chia seeds, baking powder, baking soda, and salt.
Step 3: Combine Wet Ingredients
In a separate bowl, whisk honey (or maple syrup), applesauce, oil, eggs, lemon juice, lemon zest, vanilla, and milk until well blended.
Step 4: Mix Wet & Dry
Pour the wet ingredients into the dry and stir until just combined—don’t overmix.
Let the batter sit for 5 minutes so the oats and chia can absorb some moisture.
Step 5: Fill Muffin Tin
Divide the batter evenly among the muffin cups (about ¾ full).
Sprinkle with a few extra oats or chia seeds if desired.
Step 6: Bake
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
