  • 1 lb Ground Chicken
  • 12 oz gluten-free penne
  • 1/2 cup sun-dried tomatoes (diced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Parmesan cheese (shredded)
  • Seasonings: garlic, onion, Italian seasoning, smoked paprika
  • 1 tsp sun-dried tomato seasoning
  • 3/4 tsp salt
  • 1/2 tsp basil
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1/2 cup gluten-free breadcrumbs (12 tbsp more if the mixture is too wet)
  • 1 egg (large, lightly beaten)
  • 2 1/2 tbsp tomato paste
  • 1 1/2 tbsp sun-dried tomato oil (from the jar)
  • 2 cups spinach (diced)
  • 2 tbsp butter
  • 2 tbsp dried shallots

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, seasonings, gluten-free breadcrumbs, and beaten egg until just mixed.
  3. Form into golf ball-sized meatballs and place on a lined baking sheet.
  4. Bake for approximately 20 minutes until golden brown.
  5. Cook the gluten-free pasta according to package instructions.
  6. In a large pot, melt butter and sauté garlic and onion until fragrant.
  7. Add chicken broth, heavy cream, tomato paste, diced sun-dried tomatoes, spinach, and seasonings; simmer until thickened.
  8. Combine baked meatballs with the sauce and cooked pasta; toss well.
  9. Serve garnished with chopped basil.
