Ingredients

Scale
  • 1 head green cabbage (9001100 g), cut into 8 wedges
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • ½ cup finely diced red onion
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken or vegetable broth
  • 4 oz. cream cheese, softened and cubed
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes in oil, julienned
  • Herbs: oregano, thyme, rosemary
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the cabbage into wedges while keeping the core intact.
  3. In a cast iron skillet over medium-high heat, add olive oil and sear cabbage wedges until golden brown on both sides (about 2-3 minutes each). Season lightly with salt and pepper.
  4. Reduce heat; add butter and sauté diced onions until softened. Add garlic and cook until fragrant.
  5. Deglaze the pan with broth, scraping up browned bits.
  6. Whisk in cream cheese until smooth; then stir in heavy cream and sun-dried tomatoes along with herbs and seasonings. Simmer for 2-3 minutes until slightly thickened.
  7. Stir in Parmesan cheese until melted.
  8. Nestle cabbage into the skillet; spoon sauce over each piece.
  9. Cover and bake for 45 minutes; uncover and bake an additional 15–20 minutes until fork-tender.
