For the Meatloaf:

  • 1 lb ground beef or ground chicken

  • ½ cup breadcrumbs

  • 1 egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp ketchup

  • 2 tbsp milk

  • 1 tsp Worcestershire sauce

  • 1 tsp dried thyme

  • ½ tsp salt

  • ½ tsp black pepper

For the Mushroom Gravy:

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 cup mushrooms, sliced (cremini or button)

  • 1 tbsp all-purpose flour

  • 1 cup beef or vegetable broth

  • 1 tsp soy sauce

  • Salt and pepper, to taste

  • Optional: 1 tsp fresh thyme or parsley for garnish

For Serving:

  • Mashed potatoes or buttered noodles

  • Steamed green beans or peas


Instructions

Step 1: Prepare the Meatloaf Mixture

  1. Preheat oven to 375°F (190°C).

  2. In a large mixing bowl, combine ground meat, breadcrumbs, egg, onion, garlic, ketchup, milk, Worcestershire sauce, thyme, salt, and pepper.

  3. Mix just until combined—don’t overmix or the meatloaf can become dense.

Step 2: Shape & Bake the Meatloaf
4. Transfer the mixture to a lightly greased loaf pan or shape into a loaf on a baking sheet lined with parchment paper.
5. Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
6. Let the meatloaf rest for 10 minutes before slicing.

Step 3: Make the Mushroom Gravy
7. While the meatloaf bakes, heat butter and olive oil in a skillet over medium heat.
8. Add mushrooms and cook for 5–7 minutes until browned and tender.
9. Sprinkle flour over the mushrooms and stir to coat evenly.
10. Slowly pour in broth while whisking continuously to prevent lumps.
11. Stir in soy sauce and simmer for 4–5 minutes until thickened.
12. Season with salt and pepper to taste.

Step 4: Serve & Enjoy
13. Slice the meatloaf and top with warm mushroom gravy.
14. Garnish with fresh herbs if desired.
15. Serve with mashed potatoes or your favorite sides.

Notes

Use a Mix of Ground Meat – A mix of beef and chicken or turkey adds flavor and moisture.
Don’t Overmix – Mix until just combined to keep it tender.
Rest Before Slicing – Resting helps keep the juices in.
Customize the Gravy – Add a splash of cream for richness or a bit of mustard for tang.
