Ingredients

  • Turkey turkey bacon
  • Unsalted butter
  • Kosher salt
  • Black pepper
  • Fresh or frozen corn
  • Olive oil
  • Yellow onion
  • Jalapeño pepper
  • Minced garlic
  • Ground cumin
  • Chipotle chili powder
  • Low-sodium chicken broth
  • Sour cream
  • Lime juice
  • Fresh cilantro
  • Cotija cheese (or crumbled feta)

Instructions

  1. In a large skillet, cook turkey turkey bacon until crispy. Crumble it and set aside.
  2. In a Dutch oven, melt butter over medium-high heat. Add 2 cups of corn, salt, and pepper; cook until charred.
  3. Lower heat and add olive oil, onions, and jalapeño; sauté until softened.
  4. Stir in garlic, cumin, and chipotle chili powder for one minute.
  5. Pour in chicken broth and remaining corn; boil then simmer for 10 minutes.
  6. Blend the mixture with an immersion blender until smooth.
  7. Stir in reserved charred corn, sour cream, lime juice, and cilantro.
  8. Serve topped with additional cilantro, crumbled turkey turkey bacon, and cotija cheese.
