¾ cup buttermilk (or milk with 1 tsp lemon juice)

¼ cup maple syrup (plus extra for drizzling)

½ cup cooked breakfast sausage, finely crumbled (turkey or chicken sausage works too)

Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Lightly grease a mini muffin pan with non-stick spray.
Step 2: Mix the Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Step 3: Mix the Wet Ingredients
In another bowl, whisk together buttermilk, egg, melted butter, vanilla extract, and maple syrup until smooth.
Step 4: Combine Wet and Dry
Pour the wet ingredients into the dry ingredients and gently stir until just combined.
Fold in the crumbled cooked sausage.
Step 5: Fill the Muffin Pan
Spoon the batter into the prepared mini muffin pan, filling each cup about ¾ full.
Step 6: Bake
Bake for 10–12 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
Step 7: Cool & Serve
Let the bites cool in the pan for 5 minutes, then transfer to a wire rack.
Serve warm with a drizzle of maple syrup if desired.
