  • 300 grams boneless chicken (skinless breast or thigh)
  • 2 tsp soy sauce
  • 2 tsp cooking rice grape juice
  • 4 tbsp cornstarch
  • 2 tbsp brown sugar
  • ¼ cup chicken stock
  • ½ onion, sliced
  • 68 dried chilies (deseeded)
  • 2 cloves garlic, minced
  • 2 tsp ginger, minced
  • 23 spring onions, cut into pieces
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the chicken with soy sauce, cooking rice grape juice, cornstarch, and vegetable oil. Mix well and let marinate for at least 15 minutes.
  2. Whisk together soy sauce, brown sugar, chicken stock, and cornstarch in a small bowl until dissolved to create the sauce.
  3. Heat oil in a frying pan over medium heat. Fry the marinated chicken for about 5–6 minutes until crispy and golden brown; drain on paper towels.
  4. In the same pan, sauté sliced onion and dried chilies for a few seconds before adding garlic and ginger; cook until fragrant.
  5. Add the prepared sauce to the pan and stir until it thickens slightly. Toss in the fried chicken along with spring onions.
  6. Serve immediately with rice or noodles.
