Ingredients
For the Breakfast Casserole:
1 lb ground beef sausage
1 bag (26 oz) frozen hash browns (shredded or diced)
1 medium onion, finely chopped
1 red bell pepper, diced
1 green bell pepper, diced
2 cups shredded cheddar cheese (divided)
12 large eggs
1 cup milk (whole or 2%)
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
Optional Add-Ins:
1 cup sliced mushrooms
1 cup chopped spinach
½ cup crumbled feta cheese
Instructions
Step 1: Cook the Sausage
In a large skillet over medium heat, cook the ground beef sausage until browned and crumbled.
Drain any excess grease and set the sausage aside.
Step 2: Prepare the Slow Cooker
Spray the inside of the slow cooker with non-stick spray to prevent sticking.
Step 3: Layer the Ingredients
Spread half of the frozen hash browns evenly in the bottom of the slow cooker.
Top with half of the cooked sausage, chopped onions, bell peppers, and 1 cup of shredded cheese.
Repeat the layers with the remaining hash browns, sausage, vegetables, and another 1 cup of cheese.
Step 4: Mix the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika until well combined.
Step 5: Pour and Cook
Pour the egg mixture evenly over the layers in the slow cooker.
Cover with the lid and cook on low for 7–8 hours or on high for 3–4 hours, until the eggs are set and the center is firm.
Step 6: Serve
Once cooked, turn off the slow cooker and let the breakfast casserole sit for 10 minutes.
Slice into portions and serve warm.
