Ingredients
- 1 cup old-fashioned oats
- 24 oz AE dairy cottage cheese
- 3/4 cup peanut butter (softened)
- 1/4 cup maple syrup (or honey)
- 1 tbsp vanilla extract
- 1/2 cup protein powder (chocolate or vanilla)
- 1/2 cup unsweetened cocoa powder
- 1 tbsp coconut oil (melted)
- 1 cup chocolate chips (divided)
- Flaky sea salt (optional)
Instructions
- Blend oats, maple syrup, cottage cheese, and peanut butter in a blender until smooth.
- Transfer to a mixing bowl and stir in protein powder and cocoa powder until well combined. Fold in 1/4 cup of chocolate chips.
- Scoop tablespoon-sized portions and roll into balls. Place on a sheet pan and freeze for 5-10 minutes.
- Melt remaining chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip each bite into the melted chocolate coating, allowing excess to drip off before returning to the sheet pan. Optionally sprinkle with flaky sea salt.
- Chill in the fridge until set. Enjoy fresh or store in the fridge for up to one week.
