  • 1 cup old-fashioned oats
  • 24 oz AE dairy cottage cheese
  • 3/4 cup peanut butter (softened)
  • 1/4 cup maple syrup (or honey)
  • 1 tbsp vanilla extract
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1/2 cup unsweetened cocoa powder
  • 1 tbsp coconut oil (melted)
  • 1 cup chocolate chips (divided)
  • Flaky sea salt (optional)

Instructions

  1. Blend oats, maple syrup, cottage cheese, and peanut butter in a blender until smooth.
  2. Transfer to a mixing bowl and stir in protein powder and cocoa powder until well combined. Fold in 1/4 cup of chocolate chips.
  3. Scoop tablespoon-sized portions and roll into balls. Place on a sheet pan and freeze for 5-10 minutes.
  4. Melt remaining chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
  5. Dip each bite into the melted chocolate coating, allowing excess to drip off before returning to the sheet pan. Optionally sprinkle with flaky sea salt.
  6. Chill in the fridge until set. Enjoy fresh or store in the fridge for up to one week.
