Ingredients
For the Cookies:
1 cup (2 sticks) unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 tsp vanilla extract
1¾ cups all-purpose flour
⅔ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
1 cup semi-sweet or dark chocolate chips
For the Filling:
¾ cup Nutella (about 1 tsp per cookie)
Optional Toppings:
Sea salt flakes
Chopped hazelnuts
Powdered sugar
Instructions
Step 1: Prep the Nutella Filling
-
Line a plate with parchment paper.
-
Scoop small dollops of Nutella (about 1 tsp each) onto the paper.
-
Freeze for at least 30 minutes until firm. This makes stuffing the cookies easier.
Step 2: Make the Cookie Dough
-
In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
-
Beat in the eggs one at a time, then add vanilla.
-
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
-
Gradually add the dry ingredients to the wet, mixing just until combined.
-
Fold in chocolate chips. Chill the dough for 30 minutes for easier handling.
Step 3: Assemble the Cookies
-
Scoop a heaping tablespoon of dough and flatten it slightly in your hand.
-
Place a frozen Nutella dollop in the center.
-
Cover with another small piece of dough and seal the edges to form a ball.
-
Place on a baking sheet lined with parchment paper, spacing cookies 2 inches apart.
Step 4: Bake the Cookies
-
Preheat oven to 350°F (175°C).
-
Bake for 10–12 minutes, or until the edges are set and the centers look slightly underbaked.
-
Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Step 5: Garnish & Serve
-
Optional: Sprinkle with flaky sea salt, chopped hazelnuts, or a dusting of powdered sugar.
-
Serve warm for the ultimate gooey center or store to enjoy later.
Notes
Freeze the Nutella – Prevents it from leaking and ensures a gooey center.
Don’t Overbake – The cookies will continue to firm up as they cool.
Chill the Dough – Makes shaping and stuffing easier.
Seal Well – Encase the Nutella fully to avoid leaks during baking.
Add a Pinch of Salt – Balances the sweetness and enhances chocolate flavor.
