  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups rolled oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 (14 oz.) can sweetened condensed milk
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice (about 2 1/2 large lemons)
  • 2 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, rolled oats, salt, baking soda, granulated sugar, and brown sugar until well mixed. Stir in melted butter and vanilla extract until it resembles coarse crumbs.
  3. Press half of the mixture into an ungreased 9×13 inch baking pan. Bake for about 15 minutes or until lightly golden.
  4. In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and vanilla extract until smooth.
  5. Pour the lemon filling over the baked crust and sprinkle the remaining crust mixture on top. Bake for an additional 25 minutes or until set and golden brown.
  6. Allow to cool completely before cutting into squares.
