  • 1 lb chicken tenders
  • 3 tablespoons minced garlic
  • 2 tablespoons olive oil
  • 1 stick unsalted butter (1/2 cup)
  • 3/4 cup dry white grape juice
  • 1 1/2 cups uncooked white rice (basmati or jasmine)
  • 2 3/4 cups low-sodium chicken stock
  • 1/2 cup Parmesan cheese, grated
  • Fresh parsley for garnish

Instructions

  1. Season chicken tenders with poultry seasoning. Heat olive oil in a skillet over medium-high heat and cook chicken for about 3 minutes on each side until golden brown. Reduce heat to low.
  2. Add 2 tablespoons of butter and one tablespoon of minced garlic to the skillet; sauté until fragrant. Toss chicken in the garlic butter mixture; set aside under foil.
  3. In the same skillet, add remaining butter and garlic; sauté until fragrant. Pour in grape juice and reduce slightly for about 3-5 minutes.
  4. Add uncooked rice to the pan, frying for about 5 minutes while stirring frequently.
  5. Pour in chicken stock, salt, and red pepper flakes. Bring to a boil, then cover and simmer on low for about 20 minutes until rice is tender.
  6. Stir in parmesan cheese with the cooked rice, then arrange chicken over the top.
  7. Mix remaining butter with garlic and reserved pan juices; drizzle over the dish before serving.
