  • 2 ½ cups beef broth
  • 1.5 pounds lean ground beef
  • 4 tbsp ketchup
  • 2 tbsp yellow mustard
  • 1 ½ cup orzo
  • 2 tbsp chopped parsley
  • 1 ½ cup shredded cheddar cheese

Instructions

  1. Prepare your ingredients: mince garlic, dice onion, and chop parsley.
  2. In a large nonstick skillet, heat olive oil over medium heat. Sauté garlic and onion for about 2 minutes until softened. Stir in tomato paste, then add pepper and smoked paprika. Deglaze with ½ cup beef broth.
  3. Add ground beef, cooking until no longer pink (about 3 minutes). Mix in ketchup and mustard.
  4. Stir in orzo and remaining beef broth; bring to a boil. Lower heat and simmer for 10–15 minutes until orzo is al dente, stirring frequently.
