  • 500g minced beef
  • 300g uncooked conchiglie pasta
  • 600ml beef stock
  • 500g tomato passata
  • 180ml double cream
  • 1 medium white onion
  • 3 cloves garlic
  • 1 tsp salt
  • 3/4 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/41/2 tsp chili flakes
  • 1/4 tsp dried thyme
  • 2 tbsp tomato puree

Instructions

  1. In a large pot over medium heat, sauté diced onion in oil until golden. Add minced garlic and cook for another minute.
  2. Add minced beef to the pot and cook until browned, breaking it up as needed.
  3. Stir in seasoning and tomato puree; cook for one additional minute.
  4. Pour in warm beef stock and tomato passata; add cream and stir in the uncooked pasta.
  5. Bring to a boil and cook until pasta is al dente and sauce has thickened, adding water if necessary.
  6. Adjust seasoning to taste and serve garnished with fresh parsley.
