  • 1 teaspoon Worcestershire sauce: Enhances the umami taste.
  • 1 cup shredded Gruyère or Swiss cheese: The classic French onion soup cheese!
  • ¼ cup Parmesan cheese, grated: For extra cheesy goodness.
  • Fresh parsley, for garnish (optional): Adds freshness.

Instructions

Step 1: Caramelize the Onions

  1. Melt butter in a large pot over medium-low heat.
  2. Add sliced onions, salt, pepper, and sugar. Cook for 20-25 minutes, stirring occasionally, until onions are deeply golden and caramelized.
  3. Stir in thyme and garlic, cooking for another 1 minute.

Step 2: Cook the Pasta in the Broth

  1. Add uncooked pasta to the pot. Pour in beef broth and Worcestershire sauce.
  2. Bring to a boil, then reduce to a simmer. Stir occasionally and cook until pasta is tender and most of the liquid is absorbed (about 12-15 minutes).

Step 3: Make It Creamy & Cheesy

  1. Pour in heavy cream and stir to combine.
  2. Sprinkle in Gruyère and Parmesan cheese, stirring until melted and creamy.

Step 4: Serve & Enjoy

  1. Garnish with fresh parsley and serve warm!
