Ingredients

Scale
  • 2 large onions, thinly sliced
  • 1 cup (100 g) gram flour (chickpea flour)
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 12 green chillies, finely chopped
  • 2 tablespoons freshly chopped cilantro
  • 1 teaspoon lemon juice
  • 56 tablespoons (7590 ml) water
  • Oil for frying

Instructions

  1. In a large mixing bowl, whisk together the gram flour, baking powder, salt, cumin, and turmeric.
  2. Add the chopped green chillies, cilantro, lemon juice, and enough water to form a thick batter.
  3. Fold in the thinly sliced onions until they are well coated in the batter.
  4. Heat oil in a skillet over medium heat, ensuring it is about an inch deep.
  5. Drop spoonfuls of the onion mixture into the hot oil, frying in small batches for about 3 minutes on each side until golden brown.
