Ingredients

  • Salt, pepper, garlic powder
  • ½ cup flour
  • ½ cup cornstarch
  • 2 tbsp butter
  • Cooking oil (such as sesame oil)
  • 4 strips turkey turkey bacon
  • 2 cups uncooked long grain white rice
  • 12 oz frozen mixed vegetables
  • Low sodium soy sauce
  • 4 eggs
  • Chopped green onions
  • Store-bought orange sauce

Instructions

  1. Cook the rice according to package directions and let cool.
  2. Cut the chicken into small cubes and season with salt, pepper, and garlic powder.
  3. In a bowl, combine flour, cornstarch, salt, pepper, garlic powder, paprika, and chili powder.
  4. Coat the chicken in the flour mixture and shake off excess.
  5. In a skillet over medium-high heat, melt butter with oil. Cook the chicken until golden brown; remove from pan.
  6. Add chopped turkey turkey bacon to the skillet and cook until crispy.
  7. Stir in cooled rice and frozen vegetables; add more oil if needed.
  8. Season with salt, pepper, garlic powder, and soy sauce.
  9. Create a well in the rice mixture; add whisked eggs and scramble until cooked through.
  10. Combine chicken with orange sauce; pour over rice mixture.
  11. Garnish with chopped green onions before serving.
