  • 3.4 oz box of instant vanilla pudding mix
  • 3/4 cup plain Greek yogurt
  • 3/4 cup vegetable oil
  • 3 large eggs (slightly beaten)
  • 2 tsp Adams Extract vanilla extract
  • 1/2 cup warm water
  • 1 stick unsalted butter
  • 4 cups Dixie Crystal's powdered sugar
  • 1 tsp orange zest
  • 1 tsp Adams Extract orange extract
  • 24 tbsp orange juice
  • Orange Gel Coloring

Instructions

  1. Preheat your oven to 350°F. Prepare two cupcake pans with liners.
  2. In a large mixing bowl, combine the cake mix, pudding mix, Greek yogurt, vegetable oil, beaten eggs, vanilla extract, and warm water. Mix until well combined.
  3. Fill each cupcake well about two-thirds full; this will yield about 24 cupcakes.
  4. Bake for 18 to 20 minutes until golden brown and a toothpick comes out clean.
  5. Allow cupcakes to cool completely on a cooling rack before frosting.
  6. For the frosting, cream unsalted butter, then add orange zest and extract. Gradually mix in powdered sugar and orange juice until desired consistency is reached.
