  • 1/2 teaspoon onion powder
  • 34 garlic cloves, peeled
  • 1/2 red bell pepper, chopped
  • Fresh parsley (for marinade and garnish)
  • Juice from 1/2 fresh lemon
  • 1/4 cup extra virgin olive oil

Instructions

  1. Prepare the marinade by blending garlic, red bell pepper, and parsley in a food processor until chunky.
  2. Cut lamb rack into individual chops if necessary and place in a bowl. Add the marinade mixture along with spices, olive oil, and lemon juice. Massage into the meat thoroughly.
  3. Cover and refrigerate for at least 1 hour to allow flavors to infuse.
  4. Preheat your oven to 400°F. Heat a cast iron skillet over medium-high heat with olive oil. Sear each chop for about 1–2 minutes per side until golden brown.
  5. Transfer the skillet to the oven and bake according to desired doneness (medium-rare: 130–140°F; medium-well: 145–160°F).
  6. Rest the chops before serving, garnished with fresh parsley.
