Ingredients
For the Feta Rolls
- 8 sheets phyllo dough, thawed
- 8 oz feta cheese, crumbled
- ½ cup ricotta cheese (for extra creaminess)
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons melted butter or olive oil (for brushing)
For the Chili Honey
- ¼ cup honey
- ½ teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon lemon juice
- ½ teaspoon smoked paprika (optional, for extra depth)
Instructions
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper.
In a bowl, mix crumbled feta, ricotta, oregano, black pepper, and red pepper flakes.
Stir until well combined.
Lay one sheet of phyllo dough on a clean surface. Brush lightly with melted butter or olive oil.
Place another sheet on top and brush again.
Spoon about 2 tablespoons of the feta filling near the bottom edge.
Fold in the sides and roll tightly, like a spring roll.
Repeat with the remaining phyllo sheets and filling.
Place the rolls on the prepared baking sheet, seam-side down.
Brush the tops with more melted butter or olive oil.
Bake for 15-18 minutes, or until golden brown and crispy.
While the rolls are baking, heat honey in a small saucepan over low heat.
Stir in red pepper flakes, lemon juice, and smoked paprika.
Simmer for 1-2 minutes, then remove from heat.
Once the feta rolls are golden and crisp, remove them from the oven.
Drizzle generously with the warm chili honey.
Serve immediately and enjoy!
