  • 2 tablespoons rice vinegar

  • 4 tablespoons cornstarch
  • 1/2 cup water
  • 2 teaspoons brown sugar

Instructions

  1. Marinate the chicken by combining light soy sauce, rice vinegar, sesame oil, and cornstarch in a medium bowl. Add the chicken and mix well. Let it marinate for 20-30 minutes.
  2. Prepare the sauce in a small bowl by mixing water, light soy sauce, brown sugar, rice vinegar, and cornstarch. Set aside.
  3. Heat vegetable oil in a large skillet over high heat. Add marinated chicken and cook until browned on all sides. Remove from skillet.
  4. In the same skillet, add mushrooms and zucchini; sauté for about 2-3 minutes until crisp-tender.
  5. Return chicken to the skillet along with minced garlic and ginger; stir-fry for 1 minute.
  6. Pour in the prepared sauce and mix everything together until coated. Cook for an additional few minutes until the sauce thickens.
