Ingredients
Scale
For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice (fresh)
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
For the Parmesan Topping:
- 1/2 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons butter, melted
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme (optional)
For the Sourdough Base:
- 4 slices of sourdough bread (preferably thick-cut)
- 1 tablespoon butter (for toasting the bread)
Instructions
Step 1: Prepare the Shrimp
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp to the skillet, and season with smoked paprika, red pepper flakes, salt, and pepper.
- Cook the shrimp for 2-3 minutes on each side, or until they turn pink and are cooked through.
- Drizzle the shrimp with lemon juice, toss to coat, and remove from heat.
Step 2: Toast the Sourdough Bread
- In a separate skillet or using a griddle, melt 1 tablespoon of butter over medium heat.
- Place the slices of sourdough bread in the skillet and toast for 2-3 minutes on each side, until golden brown and crispy.
- If you prefer, you can also brush the bread with melted butter and toast it under the broiler for a crispy top.
Step 3: Prepare the Parmesan Topping
- In a small bowl, combine the grated Parmesan, shredded mozzarella, melted butter, garlic powder, onion powder, and dried thyme.
- Stir in the chopped parsley and mix until well combined.
Step 4: Assemble the Dish
- Place the toasted sourdough slices on a baking sheet if you want to finish them in the oven or broiler.
- Spoon the cooked shrimp over each slice of sourdough, ensuring the shrimp is evenly distributed.
- Top the shrimp with a generous spoonful of the Parmesan mixture.
Step 5: Broil the Topping
- If using a baking sheet, place the bread with the shrimp and cheese under the broiler on high for 2-3 minutes, or until the cheese is melted and golden brown. Watch closely to prevent burning.
- If you’re not using the oven, you can also serve the shrimp with the Parmesan topping directly on the toasted bread.
Step 6: Serve and Enjoy
- Remove from the oven and garnish with additional fresh parsley or a squeeze of lemon juice, if desired.
- Serve immediately and enjoy the cheesy, savory goodness!
Notes
- Use Fresh Shrimp: The fresher the shrimp, the better the flavor. If using frozen shrimp, make sure to thaw them thoroughly and pat them dry before cooking.
- Customize the Heat: Adjust the amount of red pepper flakes to your taste. You can add more for extra spice or leave them out if you prefer a milder dish.
- Add a Zesty Twist: For a bit of tang, top the finished dish with a drizzle of balsamic glaze or hot sauce.
- Make It Extra Cheesy: Feel free to add extra Parmesan and mozzarella for a cheesier finish!
