  • 4 tsp. instant espresso powder
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ cup granulated sugar
  • 1 tbsp. brown sugar
  • ¼ cup Greek yogurt
  • ¼ cup plus 2 tbsp. milk
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tbsp. unsalted butter (melted and cooled slightly)
  • 1 ½ cups powdered sugar
  • 2 tbsp. milk for the glaze
  • ¼ tsp. peppermint extract
  • 2 tbsp. crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your donut pan.
  3. In a mixing bowl, combine all dry ingredients: flour, cocoa powder, espresso powder, baking powder, baking soda, salt, granulated sugar, and brown sugar. Whisk until mixed well.
  4. In another bowl, combine wet ingredients: Greek yogurt, milk, egg, vanilla extract, and melted butter. Stir until smooth.
  5. Gently fold the wet mixture into the dry mixture until just combined.
  6. Fill each donut cavity halfway with batter.
  7. Bake for about 10 minutes or until a toothpick inserted comes out clean.
  8. Allow donuts to cool before glazing with the mixture of powdered sugar, milk, and peppermint extract.
