  • 3 large yellow onions, peeled and thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce or coconut aminos
  • 1/2 teaspoon sea salt, more to taste
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 2 bay leaves
  • 1/2 cup cooking apple juice
  • 4 cups beef stock
  • 1 Keto Everything Bun
  • 1/2 small red, green, and yellow bell peppers, thinly sliced
  • 10 ounce ribeye steak (or substitute thinly sliced chicken or beef cutlets)
  • 4 slices provolone cheese
  • 1 1/4 cups shredded Gruyere cheese

Instructions

  1. Heat 3 tablespoons of oil in a Dutch oven over medium heat. Sauté sliced onions until soft, about 12 minutes.
  2. Add butter and continue cooking until onions are golden brown, approximately 10 minutes.
  3. Stir in Worcestershire sauce, garlic, thyme, bay leaves, salt, and pepper; cook for another 5 minutes.
  4. Deglaze the pot with cooking apple juice, scraping up any bits from the bottom.
  5. Add beef stock and bring to a boil; reduce heat and simmer for 25 minutes.
  6. In a skillet, sauté bell peppers and add your choice of thinly sliced beef until cooked through; mix back into the soup.
  7. Discard bay leaves and divide soup into oven-proof ramekins. Top with toasted buns and cheeses.
  8. Broil until cheese is bubbly and golden brown.
  9. Garnish with fresh thyme before serving.
