For the Meatloaf:

  • 1 ½ lbs ground beef (or use ground turkey if preferred)

  • 1 small green bell pepper, finely chopped

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp Worcestershire sauce

  • 1 tbsp Dijon mustard

  • 1 cup shredded provolone or mozzarella cheese

  • ½ cup breadcrumbs

  • 1 large egg

For the Topping:

  • 4 slices provolone cheese

  • Optional: extra sautéed onions and peppers for garnish


Instructions

Step 1: Preheat the Oven

  1. Preheat oven to 375°F (190°C).

  2. Line a loaf pan or baking sheet with parchment paper or foil.

Step 2: Sauté the Vegetables

  1. In a skillet, heat olive oil over medium heat.

  2. Add chopped bell pepper and onion, sauté for 4–5 minutes until softened.

  3. Add garlic and cook for another 30 seconds.

  4. Let cool slightly before adding to meat mixture.

Step 3: Mix the Meatloaf

  1. In a large bowl, combine ground beef, sautéed vegetables, salt, pepper, Worcestershire sauce, mustard, breadcrumbs, egg, and shredded cheese.

  2. Mix gently until just combined—avoid overmixing.

Step 4: Shape and Bake

  1. Transfer the mixture to the prepared loaf pan or shape into a loaf on the baking sheet.

  2. Bake for 40–45 minutes, or until the internal temperature reaches 160°F (71°C).

Step 5: Add Cheese Topping

  1. Remove from oven and top with provolone slices.

  2. Return to oven for 5–7 more minutes until cheese is melted and bubbly.

  3. Optional: broil for 1–2 minutes for a golden finish.

Step 6: Rest and Serve

  1. Let meatloaf rest for 5–10 minutes before slicing.

  2. Garnish with extra sautéed peppers and onions if desired.

  3. Serve hot with your favorite sides.

Use 80/20 Ground Beef – Adds the right amount of moisture and flavor.
