Ingredients
For the Pasta:

12 oz penne or rigatoni pasta

Salt (for boiling water)
For the Filling:

1 tbsp olive oil

1 lb thinly sliced beef sirloin or steak strips

1 medium yellow onion, thinly sliced

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

2 cloves garlic, minced
-
1 tsp Italian seasoning
-
½ tsp salt

½ tsp black pepper
For the Cheese Sauce:

2 tbsp butter
-
2 tbsp all-purpose flour

2 cups whole milk
-
1 cup beef broth
-
1½ cups shredded provolone cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese
For Topping:

½ cup shredded provolone cheese
-
½ cup shredded mozzarella cheese
-
Fresh parsley, chopped (optional)
Instructions
Step 1: Cook the Pasta

Bring a large pot of salted water to a boil.

Add pasta and cook until al dente according to package instructions.

Drain and set aside.
Step 2: Sauté the Beef and Veggies

Heat olive oil in a large skillet over medium-high heat.

Add sliced beef and sear for 2-3 minutes until browned but not overcooked. Remove and set aside.

In the same skillet, add onions and bell peppers. Cook for 4-5 minutes until softened.

Stir in garlic, Italian seasoning, salt, and pepper. Cook for another 1-2 minutes.

Return beef to the skillet, mix well, and remove from heat.
Step 3: Make the Cheese Sauce

In a saucepan, melt butter over medium heat.
