  • 1 1/2 lb top sirloin or ribeye (cut into thin slices)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp flour (divided)
  • 2 onions (quartered and sliced)
  • 1/21 cup sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp Worcestershire sauce
  • 4 cups beef broth (2 if you want a really thick stew)
  • 12 sweet bell peppers (thinly sliced)
  • 12 slices provolone cheese

Instructions

  1. In a large bowl, toss the beef slices with salt, pepper, and 2 tablespoons of flour until well coated.
  2. Sear the beef in batches over medium-high heat for 1-2 minutes per side until browned but slightly pink inside. Set aside.
  3. In the same skillet, sauté onions and mushrooms until translucent. Add garlic powder, remaining salt, pepper, Worcestershire sauce, and flour; stir to coat.
  4. Gradually pour in beef broth while stirring to prevent lumps. Bring to a bubble then reduce heat and simmer for 30 minutes.
  5. Add bell peppers in the last 10 minutes of simmering. Return seared beef to pot and heat through.
  6. Ladle stew into bowls and top with provolone cheese until melted.
