For the Fries:

  • 1 (28 oz) bag frozen French fries (crinkle cut or steak fries work best)

  • Salt to taste

  • Cooking spray or oil for baking

For the Philly Steak Topping:

  • 1 tbsp olive oil

  • 1 lb thinly sliced steak (ribeye or sirloin preferred, or shaved beef)

  • 1 small onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 1 tsp Worcestershire sauce (optional for extra umami)

For the Cheese Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 ½ cups whole milk

  • 1 ½ cups shredded provolone or mozzarella cheese

  • ¼ tsp garlic powder

  • Salt and pepper to taste

Optional Toppings:

  • Chopped green onions

  • Sliced jalapeños

  • Crumbled bacon

  • Extra melted cheese or cheese whiz for an authentic Philly touch


Instructions

Step 1: Bake the Fries
Preheat oven and bake fries according to package instructions (usually 25–30 minutes at 425°F), flipping halfway through for even crispiness.
Sprinkle with salt while hot and keep warm.

Step 2: Cook the Steak & Veggies
Heat olive oil in a large skillet over medium-high heat.
Add onions and peppers, sauté for 4–5 minutes until softened.
Add garlic and cook another 30 seconds.
Push veggies to the side, then add sliced steak.
Cook until browned, about 4–5 minutes, stirring occasionally.
Season with salt, pepper, and Worcestershire sauce.
Mix everything together and remove from heat.

Step 3: Make the Cheese Sauce
In a saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute.
Gradually whisk in milk until smooth and thickened (3–5 minutes).
Stir in shredded cheese, garlic powder, salt, and pepper.
Cook until melted and smooth, then remove from heat.

Step 4: Assemble the Fries
Layer hot fries on a large platter or sheet pan.
Top with steak and pepper mixture.
Drizzle with cheese sauce and garnish with optional toppings.
Serve immediately and enjoy while hot and melty.
