  • 15 oz fresh pineapple (or 20 oz canned pineapple in juice)
  • 2 large eggs
  • 1 ¼ cups sugar
  • ½ cup vegetable oil
  • 1 cup sour cream (or Greek yogurt)
  • 1 tsp vanilla extract
  • Juice and zest of 1 lime (or lemon)
  • 2 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • ⅛ tsp fine salt

Instructions

  1. Preheat your oven to 355°F (180°C) and prepare a spring-form cake pan by lining it with parchment paper and greasing it.
  2. Core and dice half of the fresh pineapple into small pieces, slicing the other half into thin rounds.
  3. In a stand mixer, beat together eggs and sugar until pale and fluffy. Gradually add vegetable oil, sour cream, vanilla extract, lime juice, and zest. Mix until smooth.
  4. Add flour, baking powder, and salt; mix gently until just combined.
  5. Pour half the batter into the prepared pan. Sprinkle diced pineapple on top, then layer with remaining batter and press sliced pineapple into it.
  6. Bake for about 40 minutes or until a toothpick inserted comes out clean.
  7. Cool for ten minutes before transferring to a serving plate. Dust with powdered sugar or brush with honey before serving.
