  • 1/2 cup plain yogurt (or dairy-free coconut yogurt)
  • 2 pounds boneless, skinless chicken thighs (or chicken breasts)
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 cups unsweetened full-fat coconut milk
  • 1 cup pumpkin puree
  • Spices: garam masala, turmeric, chili powder, coriander, cumin
  • Coconut oil and non-dairy butter

Instructions

  1. In a mixing bowl, combine yogurt, ginger, garlic, spices, and salt. Add chicken pieces and marinate for at least 30 minutes.
  2. Heat coconut oil in a skillet over medium heat. Cook marinated chicken until browned on all sides; set aside.
  3. In the same skillet, sauté onions in non-dairy butter until soft. Stir in additional ginger and garlic along with spices and tomato paste.
  4. Add coconut milk and pumpkin puree to the mixture; simmer to thicken.
  5. Return the chicken to the skillet and simmer until cooked through.
  6. Serve topped with fresh cilantro over rice or cauliflower rice.
