  • 4 oz cream cheese (room temperature)
  • ½ cup pumpkin puree
  • 14 oz sweetened condensed milk
  • 1½ teaspoons pumpkin pie spice
  • ½ cup certified gluten-free graham cracker crumbs
  • ½ cup white chocolate chips
  • ⅓ cup sugar
  • Dark chocolate chips (1 per serving)
  • Optional: orange food coloring

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, melt together the butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until fully combined.
  3. Stir in the graham cracker crumbs and white chocolate chips until melted and smooth. Add optional orange food coloring if desired.
  4. Cook the mixture until it thickens slightly and pulls away from the sides of the pan. Remove from heat.
  5. Pour onto the prepared baking sheet, spread evenly, and refrigerate for 1-2 hours until firm.
  6. Once chilled, slice into strips and roll each into a ball; flatten slightly to shape like pumpkins.
  7. Roll in sugar for added sweetness and texture; use a toothpick to add lines for detail and place a dark chocolate chip on top as a stem.
