- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup canola or vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 1 and 1/2 cups canned pumpkin puree
- 2 large eggs, at room temperature
- 1/4 cup milk, at room temperature
- 3/4 cup all-purpose flour (spooned & leveled)
- 1/4 cup granulated sugar
- 1/4 cup packed light or dark brown sugar
- 1 teaspoon pumpkin pie spice
- 6 tablespoons unsalted butter, melted
- 1 and 1/2 cups confectioners' sugar
- 2 tablespoons pure maple syrup
- 2 tablespoons milk
Instructions
- Preheat your oven to 425°F (218°C) and prepare two muffin pans for 15 muffins.
- In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
- In another bowl, mix canola oil, granulated sugar, brown sugar, pumpkin puree, eggs, and milk until well combined.
- Pour the wet ingredients into the dry mixture and fold gently until just combined.
- Fill muffin liners nearly full with batter.
- For the crumb topping, mix flour, granulated sugar, brown sugar, pumpkin pie spice, and melted butter until crumbs form; sprinkle on top of the batter.
- Bake at 425°F for 5 minutes; reduce temperature to 350°F (177°C) and bake for an additional 16–17 minutes or until a toothpick comes out clean.
- Allow cooling slightly before drizzling with maple icing made from confectioners' sugar, maple syrup, and milk.
