  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese
  • 345 g powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, blend dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; avoid overmixing.
  5. Scoop the batter into cupcake liners about two-thirds full.
  6. Bake for 23 minutes or until a toothpick inserted comes out clean. Let cool before frosting.
  7. In a mixing bowl, beat together butter, dark brown sugar, and cream cheese until smooth and creamy, then gradually add powdered sugar and vanilla extract until well combined.
  8. Once cooled, generously frost each cupcake with the brown sugar cream cheese frosting.
