  • 1 large egg (room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • ½ tablespoon water
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In one bowl, mix together all-purpose flour, oat flour, pumpkin pie spice, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Combine the wet and dry mixtures until well blended into a thick batter.
  5. Transfer the batter into a piping bag and fill each donut cavity halfway.
  6. Bake for 6-7 minutes until they spring back when touched or a toothpick comes out clean.
  7. Cool completely on a wire rack before glazing with the maple mixture.
