  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • 1 handful walnuts
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C/400°F.
  2. Peel and chop the butternut squash into 2cm cubes; place in an oven-safe dish.
  3. Add garlic cloves (unpeeled), thyme leaves, and olive oil; season with salt and pepper, then mix.
  4. Place the block of feta cheese in the middle of the dish and drizzle with extra olive oil.
  5. Roast for 25 minutes until pumpkin is tender and feta is softened.
  6. Cook pasta according to package instructions.
  7. Once roasted, peel garlic and mash in the dish; stir in softened feta.
  8. Add spinach and cooked pasta along with reserved pasta water; mix until creamy.
