Ingredients
- 360 g pasta shells
- 1 kg butternut squash pumpkin
- 8 garlic cloves
- 180 g feta cheese
- 2 big handfuls baby spinach
- 1 handful walnuts
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C/400°F.
- Peel and chop the butternut squash into 2cm cubes; place in an oven-safe dish.
- Add garlic cloves (unpeeled), thyme leaves, and olive oil; season with salt and pepper, then mix.
- Place the block of feta cheese in the middle of the dish and drizzle with extra olive oil.
- Roast for 25 minutes until pumpkin is tender and feta is softened.
- Cook pasta according to package instructions.
- Once roasted, peel garlic and mash in the dish; stir in softened feta.
- Add spinach and cooked pasta along with reserved pasta water; mix until creamy.
