  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil (80 ml) (canola works too)
  • 1/2 cup brown sugar (100 grams) (packed)
  • 1/4 cup granulated sugar (50 grams)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream (60 ml)
  • 1 cup pure pumpkin (240 ml) (AKA pumpkin puree)
  • 1/2 cup powdered sugar (55 grams) (AKA icing sugar)
  • 12 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with papers.
  2. In a medium bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the streusel topping. Add melted butter until crumbly.
  3. In another bowl, whisk together flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In a large mixing bowl, beat vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and pumpkin until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Fill muffin cups two-thirds full and sprinkle with streusel topping.
  7. Bake for about 25 minutes or until a toothpick comes out clean.
  8. For the glaze, whisk powdered sugar with cream until smooth; drizzle over cooled muffins.
